Reality Check and a recipe!

Hi there!

Let me tell you a story.

Once upon a time (last Wednesday) I thought I was in pretty good shape.  I ran 13.1 miles the week before!  I go to the gym!  I push 50 pounds of a stroller in the Texas heat!  This Insanity business will be a piece of cake.

I was very, very wrong.

This Insanity business is CRAZY.  I am basically wishing death on myself for 40 minutes a day.  And apparently, next month, the workouts are TWICE AS LONG.  WHAT?!

Someone save me.

I'm excited to see what kinds of results these workouts will have on my body.  Since I've started them, I pretty much want to sleep and eat all day.  Not much different than before, but still.

So that's what's been going down on the fitness front lately.  I feel like I don't want to update everyday about Insanity, because well, it would be pretty redundant.  Guess I'll have to post more recipes and ramblings about the babies :)


And to end on a happy note- a recipe!

I have been itching to make homemade granola for weeks because, honestly, store bought stuff is good, but homemade is way better.

Then I spotted a recipe on Pinterest and I knew it was meant to be.

And it was everything I hoped it would be, and more.

Coconut Granola
Adapted from Two Peas and Their Pod

2 cups old-fashioned oats
1 heaping cup shredded sweetened coconut
3/4 cup chopped almonds
2 tablespoons brown sugar
1 teaspoon cinnamon
1/4 teaspoon salt
4 tablespoons coconut oil, melted
1/4 cup pure maple syrup
1/4 cup honey
1 teaspoon vanilla extract
1/4 teaspoon coconut extract or almond extract

Preheat oven to 300 and line a baking sheet with parchment paper.

Mix all dry ingredients in a large bowl.  Set aside.

Wisk all wet ingredients in a small bowl.  Stir into dry ingredients until completely covered.

Pour mixture on lined baking sheet.  Bake for 30 minutes, stirring every 10 minutes.
