Awesome Spicy Avocado- MMAZ

Better With Veggies


When Heather announced that avocado was the first ingredient of Round 2 of MMAZ, I had so many delicious ideas.




And look what I made.  The lamest sounding creation ever.  Ever!

BUT!

It is soooooo good that I hope you'll forgive my creative lapse.




Spicy Avocado
Serves 2

1 avocado
4-5 pieces sun dried tomato, minced
1 chili and adobo sauce, minced
1/8 tsp onion powder
1/8 tsp cumin
salt and pepper to taste
chili adobo sauce, to taste

(Mini Reese's cups, optional ;)

Mash the avocado until a paste forms.  Add remaining ingredients, and allow to sit for at least 30 minutes.  This gives the smoky adobo flavor a chance to "make the rounds."  You can double, quadruple, whatever this recipe to your needs.  I won't judge you if it's only for yourself.

I enjoyed this on a Flat-Out wrap, with vegetarian refried beans, sweet onion, and lettuce.



So.  Good.  Really really.

  1. Not lame at all. Sounds yum! I went way over my head with submission - I doubt anyone will be inspired to make it, it's so difficult! I can definitely say I'll be making awesome spicy avocado some time soon though!
