WIAW + a Vegan Veggie Burger Recipe!

This has absolutely nothing to do with WIAW but I just have to get it off my chest.

I am always late to the party.  No, no, not like a real life party. (the outside world is scary!)  I mean to the popular culture party.

Hmm, how to explain this.

Let's see- when something gets really popular, most people want to check it out.  See it for themselves.  A video, movie, book, song... it doesn't matter.  If it creates a lot of buzz, you usually want to see what all the fuss is about.

Not me.  I wait an uncomfortable amount of time.  Just when all the hoop-la (yup, I went there) is about over, this is when I swoop in.

Then, just like everyone before me, I am enamored by the cuteness/catchyness/absurdity of said pop culture phenomenon.  Of course, everyone is over whatever it is, and I'm all by myself jamming. 

Example:  The Twilight books, or Call Me Maybe.

So darn catchy!

Okay sorry, I just had to tell someone.  Why am I like this?!




Anyway- onto food!  Here are my eats from yesterday, along with a freaking delicious veggie burger recipe (its vegan, woo!).  Get your hippie bandanas on and let's do this.


Breakfast:  Overnight oats- 1/2 c oatmeal, 1/2 c water, 1 banana, some almonds, 1/4 tsp vanilla extract, 1/4 tsp almond extract, 1/4 tsp coconut extract, sprinkle of coconut, splash of almond milk.  It's a lot of shtuff, but MAN it's soooooo good.


Lunch:  Some weird rice concoction.  Brown rice, spinach, onion, and a drizzle of hot sauce.  And a cheese stick.  And a fluff cup of water.  Don't judge, it's the best water cup, ever.


Post run snack:  1 Braeburn apple, Tbs peanut butter, spoonful of Trader Joe's pumpkin butter (aka crack)


Dinner:  Chickpea and black bean veggie burger with spinach, ketchup, and mustard, plus a giant heaping pile of delicious scalloped corn.  So.  Good.


The veggie burger is sooo versatile.  I made them last week, and they were gone in two days.  I ate two as veggie burgers, one as a taco, and one as a "meatball" in tomato sauce with pasta.  You could definitely switch up the spices to cater towards Italian or Mexican, but as they stand they definitely can chameleon into whatever dish you're making.

Just, make these.  Please??


Vegan Veggie Burgers
makes 4 burgers

1 15 oz can chickpeas, drained
2/3 15 oz can black beans *
1/2 c brown rice, cooked
2 flax eggs **
2 Tbs flax
1 Tbs bread crumbs
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp tumeric
1/2 tsp cumin
1/2 tsp salt
1/2 tsp pepper

Put chickpeas and black beans in a medium bowl, and slightly mash approximately half.

Add in remaining ingredients and mix until combined.  Divide and shape mixture into 4 patties.

Heat up 1 tsp of olive oil over medium heat, frying one patty at a time, flipping when browned.  Approximately 4 minutes per side.

Wrap any unused patties in aluminum foil and freeze.

*My children love black beans out of the can.  Cold, out of the can.  I know, they're weird.  But you can definitely use the whole can, as I have made them both ways.
**2 Tbs flax seed + 4 Tbs water, stir and allow to sit about 15 minutes


Question:

Am I alone?  Does anyone else wait a ridiculous amount of time before you check out popular songs/videos??

  4. I was so disappointed to read there was only water in there... And me just now reading and commenting on your bog is proof that I'm late for the bandwagon as well! In actuality, I tend to follow your lead. Seriously. I read the Twilight books only after you did because I thought, "Well, Nicole liked them so okay; let's do this."
