Giant Cookie Cake- 2 Ways!

October is a month full of birthdays in my family.

Husband, sister, sister's boyfriend, Dad, PLUS our anniversary!  It's pretty busy up in here.

And what better way to celebrate than with GIANT cookie cakes?!

Both recipes have been adapted from my most favorite cookie recipe ever.



Giant Chocolate Chip Cookie Cake
Serves a boat load

3 c all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 c (two sticks) butter, softened
1 3/4 c packed brown sugar
1/2 c sugar
2 eggs + 1 egg yolk
1 tbs vanilla
1 12 oz bag semi sweet chocolate chips

Mix flour, baking powder, baking soda, and salt in a bowl, set aside.

Cream butter and sugars together in an electric mixer until light and fluffy.  Beat in eggs one at a time.  Add egg yolk and vanilla.

Slowly add in flour mixture until just incorporated.  Mix in, by hand, the chocolate chips.

Grease a 20" deep dish pizza pan.  Spoon all the cookie dough into pan and spread out until the whole pan is covered.

Bake in a 300 degree oven for 22-25 minutes.  Enjoy!!


White Chocolate Macadamia Nut Giant Cookie Cake
Serves a whole buncha folks

3 c all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 c (two sticks) butter, softened
1 1/2 c sugar
1/2 cup loose brown sugar
2 eggs + 1 yolk
1 tsp vanilla
1 1/4 c macadamia nuts, toasted
2 c white chocolate chips
Mix flour, baking powder, baking soda, and salt in a bowl, set aside.

Cream butter and sugars together in an electric mixer until light and fluffy.  Beat in eggs one at a time.  Add egg yolk and vanilla.

Slowly add in flour mixture until just incorporated.  Mix in, by hand, the macadamia nuts and white chocolate chips.

Grease a 20" deep dish pizza pan.  Spoon all the cookie dough into pan and spread out until the whole pan is covered.


Bake in a 300 degree oven for 22-25 minutes.
